In my opinion, it's not childish at all. Yes it can be entertaining for kids, but it can also be an imagination interpreter for architects, or just older people that want a good game to play. I know many people over 30 that play this game, including my grandfather.

I like the more adult youtubers from the beginning of the game, and that have been doing Minecraft for many years. However it now looks 'childish' in a sense that kids think playing Minecraft on youtube will be a way to earn quick moneys, which has in turn put many kids at the front of the Minecraft community. This has it so newer players see these childish youtubers and think the game is for immature people instead of back in beta when only mature adults played, and kids didn't really show up as much. Also the more mature players such as us meta, and others like Chall and tobiii (and a few others I cannot list) don't go on websites being a fanboy / girl on websites. A lot of things on the internet have Minecraft fanboy/girl people on them who are 9-12 and are super immature and don't understand what they are doing. They might think that they are supporting the game, when they are actually giving it a bad name of over the top fanboys/girls. This is also happening on the McTopia community, I was contacted by 125 he claimed he was the 'McTopia Advertising Staff' and I asked how he was doing so, his response was by going onto larger servers and advertising McTopia. This may seem great, however he is showing that McTopia is a community that is full of immature players who need to advertise on other server, which gives the server a bad reputation, which is not what we want for a server such as this. 125 had good intentions but the way he fanboy'ed the server made it look like it was full of immature players, when its actually not. You guys don't need to agree its just my opinion ;P
